Pablo Salas On Iron Chef: Mexico
Netflix’s Iron Chef: Mexico, the Iron Chef spin-off, premiered on September 21, 2022 and, like the original series, featured six kitchen challengers, including Pablo Salas, ready to battle the judges.
If you’re new to the format, Mexican chefs competed in the studio, each vying for “Iron Chef.” So the gold had to impress a rotating panel of judges with his cooking while under enormous time pressure to prepare different dishes. So, in the end, only one winner remained, who was then awarded a katana, a long sword associated with Japanese samurai.
But why Katana? Well, the show was originally broadcast for the first time in Japan in 1993 under the title Ryōri no Tetsujin, which means “Iron Men of the Kitchen.” The series ran for 309 episodes until 2002. It was then revived under the new name Iron Chef in 2012. Since then, it has spawned numerous regional spinoffs, including this Mexican version.

Joining Pablo on the inaugural season of Iron Chef: Mexico were his colleagues: Claudette Zepeda (owner of Taqueria Zepeda, a small taco shop in Sydney, Australia), Claudia Albertina Ruiz Sántiz (owner of Kokonó and Albertina), Abel Hernández (owner of Eloise and Loretta), Adria Marina Montaño (owner of two food trucks), Diana Dávila (owner of Mi Tocaya Anto jeria in Chicago, Illinois), Karen Valadez Burstein (owner of Casa Valadez and La Virgen de la Cueva) and Francisco Molina (owner of Evok and Casa Bernabé).
As for the jury, the “Iron Chefs” were Francisco Ruano, Roberto Solis and Gabriela Ruiz.
Additionally, the original president, Mark Dacascos, returned to the show that season.

Pablo Salas career
Pablo Salas says he is “just a chef,” primarily a self-taught chef, who later honed his culinary skills at Ambrosía (arguably the best source of culinary education for chefs in Mexico).
In Ambrosía, Pablo apprenticed with chef Federico López. There he learned extensive culinary theories. But when he graduated in 2002, he was faced with the shocking reality that the real-world food industry “isn’t looking for educated Gastronomy Graduates,” but for trained chefs.
Therefore, with no hope of finding work, Pablo returned to Toluca and opened a confectionery studio. Over time he bought a restaurant on Francisco Murguía street (owned by his friend), and finally in September 2010 he decided to redefine his cooking and his career, giving birth to Amaranta.
Now Pablo’s restaurant is listed as one of the best restaurants in Mexico in various publications.
In addition to Amaranta, Pablo was also the man behind Lona Cocina and Tequileria. This Mexican restaurant offered Salas’ “eclectic and soulful Mexican cuisine in a sleek yet modern setting, complete with a stunning outdoor bar, casually elegant indoor dining room, dedicated tequila tasting room, and multiple private dining rooms.”
Following his success, Pablo was also named a delegate to the Conservatory of Mexican Gastronomic Culture (CCGM) and was granted membership in the Colectivo de Cocina Mexicana, where he offered cooking classes through various educational institutions throughout Mexico.

Pablo Salas attributes his success to his family of four.
In retrospect, it was his father, Francisco, who quit his job and sold everything he owned to support Pablo’s decision to buy a friend’s restaurant on Calle Francisco Murguía.
Subsequently, Pablo’s mother, Verónica, joined as manager, and Pablo’s brother worked there as a sommelier and floor manager.
“Mom had the biggest influence on me because she wasn’t a trained cook, but she loved to cook every day. She watched her cook all the time, always trying new things. Sometimes she worked and sometimes not, and I think that’s how we cook (in Amaranta) ”, Pablo recalled.
